Momma’s Meatloaf
For the Glaze: Whisk together all the glaze ingredients in a small bowl. Using a pastry brush, spread half of the glaze over the top and sides of the meatloaf.
To make the best meatloaf, you need to start with the best ingredients:
3 Tbsp butter
Pinch of Baking Soda
1 onion - chopped fine
Salt & Pepper
2 -3 garlic cloves - minced
minced fresh thyme - about a Tbsp
2 Tbsp Worcestershire sauce
1/4 cup quick oats
2 tsp cornstarch
2 egg yolks
2 Tbsp Dijon Mustard
2 Tbsp Honey
2 lbs ground beef OR 1 lb each of beef and pork
1/2 cup grated Parmesan Cheese
1/3 cup chopped fresh parsley
The Glaze:
1 cup ketchup
1/4 cup Honey
3 Tbsp apple cider vinegar
1 tsp hot sauce
Let’s Put it all Together:
Melt butter in a skillet over low heat. Stir in the baking soda, add the onion, and a pinch of salt. Increase the heat to medium and frequently stir until the onion is softened. The baking soda will foam a little, but this is normal. Next, add garlic and thyme and cook until fragrant. Stir in Worcestershire sauce and continue to cook until slightly reduced. Set aside and let cool.
In a large mixing bowl: combine oats, cornstarch, 1 tsp salt, and a few grinds of pepper.
Stir egg yolks, mustard, and honey into the cooled onion mixture. Add ground beef, Parmesan, parsley, and oat mixture - using your hands - until well combined. Using wet hands, shape it into a 9 by 5 - inch loaf. Transfer meatloaf into a baking dish.
Preheat oven to 350 and bake meatloaf for 40 minutes.
Brush the remaining glaze on top and sides of the meatloaf and continue to bake until it has an internal temperature of 160 degrees (about 30 - 40 minutes longer). Let meatloaf rest for 20 minutes before slicing and serving.
